Vietnamese: Nước Chấm (Classic Dipping Sauce)

(makes 1 cup)

Ingredients:
- ¼ cup fish sauce 
 - ½ cup water
 - Juice of ½ lime 
 - 1 teaspoon rice wine vinegar 
 - 2 tablespoon agave nectar 
 - 3 cloves garlic, minced
 - 1 small Thai chili pepper, finely diced (optional)
 - 1 tablespoon shredded carrots (optional)
 - 1 teaspoon chili garlic sauce (optional)
 
Procedure:
- Whisk together all ingredients, taste and adjust to your liking
 - Serve as a dipping sauce, or use as a base for other sauces
